New years resolutions?

I don’t do new year’s resolutions. I do however set some loose goals for things I would like to achieve in the coming year. My main goal this year is to do more of the things that I love doing. One of the things I am trying to do to achieve this is to just do the thing when I think of doing it, instead of overthinking it and then ending up not doing it anyways. And if the time or place does not allow me to do it right then and there, I will at least note it down in my to-do list or schedule it for a time in the near future.

So far it has worked out great at least once this weak already. On Monday I was sitting at home when the clock was nearing dinner time and I looked out the window, at the beautiful weather, and thought that it would be great to have dinner outside. And instead of overthinking it and let time drag on until it is way too late, and I should rather just make food at home and then go to bed (which I tend to do way to often). I got up had a look in the fridge to see what I could make and then called my cousin to see if she wanted to join the adventure. She was more than happy to join and within half an hour we had packed our backpacks full of food and firewood and were off.

Since it was already starting to get dark out (it starts getting dark around 16:00 at this time of year where I live) we decided to take a short 10-minute walk to a spot that we have been to several times before. It is a great spot for this kind of adventure not only because the walk in isn’t too long, but it is also usually not too windy even if it is relatively exposed spot that has a great view. When we got there, we started by getting the fire going and then put on some more layers to keep warm while sitting still. Then, when the fire was ready to cook on, we started making dinner.

On the nights menu we went with both something tried and tested, and something we have never tried before. Namely Norwegian* tacos and nachos. Now both of us have made both tacos and nachos before, but none of us had tried making nachos on a fire before. To start of we cooked some chicken and threw in some red onion, garlic and paprika, as well as taco spice. Part of this was then placed in tortillas together with some salad, cheese, sour cream and salsa. Mainly to make sure that we would be getting some edible dinner that night.

The rest of the chicken was then transferred to a plate while we layered nacho chips and cheese in the skillet and then put the chicken back on top before putting the skillet back over the heat. Now we should probably have known this, but nacho chips are surprisingly flammable. Which isn’t really a problem. Until you start doing something ales while you are waiting for your nachos, that are sitting over direct heat on an open fire, to be done. We realised out mistake when there was suddenly a fire both under and IN the skillet. Thankfully snow is great at extinguishing nacho fires, and it was only the underside of the nachos that got burned to coal, while the rest was perfectly edible.

Even if we might need a few more tries before we perfect making nachos on a fire, we got a fabulous start to the first week of January. And I have gotten of to a great start on achieving my goal of doing more of what I love doing in the coming year.

 

*I call it Norwegian tacos so as not to offend anyone who can make actual authentic tacos, seeing as these tacos would not pass that test. Also, Norwegian tacos are mostly made with ground beef so it isn’t technically that either, but bear with me.
